By way of experiment I did one of my regular journeys entirely in sport mode. The journey includes back streets, A & B roads and motorway. The results are interesting:

Lag is virtually eradicated in any situation.

Using cruise on the motorway seems to overide the fact you are in sport and puts the box in S7. Turning off cruise drops it S6 improving engine braking if you are coming up behind someone. Accelerating (with cruise still on) immediately drops it to S6 to give you better response than in D + cruise.

It uses no more fuel than in D providing you aren't tempted to hoof it and enjoy the extra response! It seems, on gentle acceleration, to be lighter on fuel by allowing the engine to rev slightly higher and produce more power before changing up.

With a light foot the upchanges occur at ~3-3.5k rpm and downchanges ~2-2.5k rpm so you can always accelerate in the gear you are in without the box having to dither, swapping cogs.

The only downside is that it sometimes hangs on to a gear longer than you would on back street driving
