I am loving the Yeti, but there is one thing that is REALLY annoying me....I want the unlock button on the key fob to unlock all the doors and the tailgate, not just the driver's door. Is this something I can adjust easily??

If you've got Maxidot, it's in there (well it is on the Octavia) - convenience i think is the label

Easy fix - go into the Maxidot and scroll to settings. You can then "check" the box to allow all doors to open. You will need to do this with both keys in turn in ignition, otherwise 1 key will open all doors and the other key will carry on as now (opening drivers door only).

I've never really found this a problem as you only have to press the unlock button twice (takes a nanosecond) to unlock all the doors. I think, as mentioned on a previous thread on the matter, it is purely a personal safety feature.

If you can't do it through the maxidot then I'm just down the road from you and I can sort this with VCDS for you.
