I drive approximately 15 miles to work each day, mainly 60mph roads, car struggles to reach full temp (90) made even worse with heater on.

How far does it take your car to reach normal temperature?

Im thinking that maybe the thermostat is stuck open or opening too early causing my problem.

Car is 2.0 tdi cr vrs

Don't fancy changing the thermostat only to find out that there's nothing wrong with it and this is just how it is.

Unless you have any other ideas?

Perfectly normal, the more efficient a car the longer it takes to warm up

You could look to block the top grill, Team Heko do proper covers and you can get them via ebay.

Blocked the top grill with one of those yesterday trundlenut, not convinced that it has helped but certainly can't do any harm. Thanks for the suggestion though.
