Had a 2000 VRS loved it, but is had to go about 18 months ago.

I need a car, to be able to go across a field once in a while, tow, roof rack, estate for the dog.

Found myself a one owner 62k mile Octavia 4x4 estate 1.8t. 2001

Very pleased with it.

I will start the ball rolling by saying welcome from a past 2002 Octavia 1.8T 4X4 Estate owner. :) It is a much under-rated car which can be transformed by a remap into a 'sleeper'. The new owner of mine has just posted a writeup on that car at the end of his ownership of it which you can read below.

I'm not sure if the one i've bought is chipped, the seller wasn't sure as the owner and him had discussed it once.

 

It does seem to go well, better than i remember the VRS, but it may be the extra grip.

 

Needs a leather interior, what fits?

Go over to the Octavia I forum to ask about alternative leather seats. I think there are a number of options from other VAG models, although maybe not for the rear seating. I had my Fabia vRs and Octavia II retrimmed in leather by Seat Surgeons in York, but that is probably too expensive an option now for your 4X4.
