In terms of getting them fitted, what do you actually pay for? Or can i just do it myself?

I fitted seals and stuff before when i first put them in. But i assumed theyd need setting up or some special tooling is needed or something? Cant seem to find any info anywhere.

you pay for fitting, balancing, the nozzles themselves any new seals and parts that you injector bodies require

If you upgrading the nozzles, you may need to adjust the break pressures.
