I have only the base (L?) cheapo entry level S Superb, our lad has a Golf 1.6tdi and said he can turn is A/C "down", can I?

Basically it's either on or off. However, when in full 'Auto' mode you can select either 'low' or 'high' for the auto fan speed (this is not the same as fan manual override) so maybe this is what he means.

 

This can be selected by pushing the 'Auto' button on the climate control either once or twice, it toggles between the two options.

Are you sure he isn't just referencing the ability to turn the temperature down?

 

Some cars have an on/off button for the A/C and the temperature is adjusted using a traditional rotary dial, one end blue for cold, the other side is red for hot.

 

The Superb (and I'm guessing the Golf) will have climate control, here instead of turning a knob from red to blue you are able to adjust the temperature by 1 degree at a time.

Just turn the heater up with the ac on , that's all the climate control does

Climate control tries to maintain a preset temperature in the car regardless of outside conditions so once you set the temperature you mostly don't need to make any more adjustments as the temperature outside the car changes. Air conditioning is the part of climate control that cools the air below ambient temperature. If you just have air con/heating without climate control you have to turn it on and off yourself as the car gets too hot/cold.
