Okay, so.  What head units does everyone have?  And has anyone gone 'wild' and done something different like putting/using a (computer) Tablet in the gap instead?

I've got the kenwood dnx7240bt in mine and its pretty good, sat nav, supports iPod, rear view camera and a few other things.

I wanted to do the ipod mini or another 7" tablet but it was going to cost to much. So I went for the kenwood dnx521dab unit. Vw approved unit that works with everything on the car

Just an upgrade to Columbus for me. Does everything I want it to and more.

Upgraded mine to a Chinese tv, DVD, sat nav, PC head unit soon to be linked to the front headrest DVD monitors. Also has front acamera and reversing camera (both still in the box). Pictures when I've done it. had no issue so far :D

I've been recommended the Pioneer DA120 which supports Apple Car Play, but looking around £300 + installation :o

You can do it yourself, all you need is a separate 12v from the fuse box. There's a few ignition lives that are empty. Saves you a few quid.
