Since its last service by Arnold Clark the box seems to down shift when descending hills to what I think is to low a gear sending the revs up due to engine braking, I knock the lever over and knock it up 2 gears which is fine just bloody annoying has the box been remapped and is that even possible

I'd say it's been reset.

It learns your driving style so in a few weeks it will be back to normal.

At what revs is the engine sitting after the auto downshifting? 

 

On steep downhill runs my 2012 vRS CR (170) DSG will downshift and hold at up to 3500rpm.  Just what I want rather than having to 'ride' the brake pedal. 

My 2011 vRS downshifts like that and keeps about 3k rpm once you have braked down hill and don't re-accelerate.  I like it like that, as well.  Feels more controlled than shifting back to top again and the car running away. On large open downhill runs, I think if you just put light throttle back on again it will upshift again without needing to upshift manually.

 

What is curious to me is that my My2007 Mk5 golf that had dsg never did the downchanges and although 4.5 years had past (between manufacture dates) I didn't think the 6sp DSG had really changed at all.

Sounds normal as you will have more control over the car in a lower gear going up and down hills. If you ever go down a steep hill there is usually a sign saying select low gear or something similar. The recommendation is to put the car in a low gear to prevent it from going too fast. I think it is good it actually does this automatically for safety and wouldnt be putting it in to a high gear manually.
