Is there a way to remove the bar to put two seats down and leave the third up?

Which bar are you referring to? The rear seats are a standard-across-the-range ⅔ ⅓ split.

 

If you have an estate the retractable luggage cover is easily unclipped by sliding one edge inwards and pulling up. The hatchback's cover can be slid out after disconnecting the hatch stays.

Neither of these, however, have any effect on the ability to fold the rear seats down.

Do you have the net partition attached? If so you can remove it by folding the seats flat and sliding it towards the right hand door. Once removed you will be able to split the seats.
