We are about to remove the coil overs from our MK 1 and go back to original springs, but which springs go to the front and rear, I have two sizes thinner coil and fatter coil, sorry if this sounds daft but would not like to get it wrong

You can't get it wrong, the coils are completely different diameters and simply won't fit. Large diameter front, smaller rear.
