I , have got a 2011 Monte Carlo with only two rear headrests, just wondering if anyone knows if it is an easy job to retro fit one. Thanks.

I think many had just the pair and the simplest (!) Way of retro-fitting a third, centre one, is to change the whole rear seat back rest. It is fairly easy to remove up to a point as the seat belts are anchored to it so will have to be removed and refitted, usually with new bolts for safety but thread-lock may suffice. That said, bolts do stretch so that may be the issue, rather then grip! 

I doubt two rest versions will have the tubes needed to fit the extra rest and even if they did, making the hole in the material will be at best, risky as it may look pants! You will then need to source the headrest, where getting the whole back rest might be simpler to find.
