Will they fit over 340mm front vRS calipers?

A quick google suggests they will. The vRS had an option of Dorado 17" wheels.

I ran 17" Dorado wheels on my Ex 66 plate MKIII Vrs.   ( Winter Set up )

 

They were very tight to the Brake callipers 2 or 3mm. The wheels has a ET of 51 so anything that brings the wheels in closer to the calliper might be a No No. Teron 17" wheels are ET49 

 

The Dorado 17" wheels were OE for a Cyprus Spec MKIII Vrs
