My ‘03 1U5 vRS estate needs a new cat back stainless steel exhaust. Any recommendations, please?

Jetex! I have one on mine and it's been on there a fair while and still good. Subtle sound too.

Another vote for the Jetex system here. I have one on mine too, with the tailpipe that sort of resembles the factory item. It's quieter than I thought it would be, even with the non-res system, but to be fair I'd rather have it that way round than drone on the motorway.
