In order to use the parking assistant on MY Skoda App, do I need a data plug?

No, I use the Parking Assistant and my Octavia doesn't have the option of a data plug as it has a MIB1 Amundsen.

No idea, I don't have ambient lighting.

Ambient lighting colours are selected through the infotainment system. Not aware of any ability to remotely alter these settings.
