What settings do I need to allow the batteries to charge whilst on motorway driving. 

Open up the driving modes with the 'Mode' button.  Up the top you can choose between Battery or Hybrid mode.  Choose hybrid, uncheck the 'automatic' tick box and select maximum capacity on the picture of the battery on the right.   You can choose how much battery charge you want to retain here.

Yes it does, like everything else 😔

So when driving on EV and say its down to 10%, if on motorway I go into hybrid, if I set the minimum battery charge level then to 50%, will the car attempt to charge the battery too. 

Yes, that's how i think it works.
