As the title says, I'm going to look at a second hand('05) Fabia vRS and would like to know what to look out for? Obviously, being an '05 I wouldn't expect much to be wrong and with only 10,000miles. But was there recalls etc?

There was a recall on the fuel pump I believe, but a dealer should be able to tell you if that's been carried out on the car. Rear door seals also leak so be sure to have a feel around the footwells for damp carpets.

Check in the driver's side wheel arch. Some fabia's have lots of holes bodged into the lining to help air flow through the intercooler.

Check for signs of water leaks/wet carpets in the footwells.

i would read up on the fabia section to see what the common faults are , generally they are pretty reliable . i think the fuel pump recall that was mentioned was for cars built between mar04 and aug04 iirc , so an 05 car shouldn't be affected
