Am i right in thinking you shouldnt use 100% coolant.

Something like 40% coolant to 60% water??

It should be fine just to top up with water. I seem to remember that my Fabia had to have the coolant refreshed as part of the 4 year service - not sure if that's true of all the Fabias....

Ok to use water in small ammounts but we have been advised on no account to mix different types of Antifreeze especially the VAG A/F

not sure if it reacts together or congeals but best not be a pioneer and find out.
