Quite messy throttle body?

I've been having problems with my car ever since I bought it about half a year ago. One of the major problems has been stalling when moving from zero speed: there is no finding the usual stable biting point. If I give some throttle in neutral pos the rpm will sway back and forth, it never stays stable at, for example 1300 rpm. Also, recently, the car has started stuttering when idling or at any speed when using only little throttle.

Now, I decided to clean the throttle body, wich seemed to be a possible cause. From above it looked quite messy, but now that it's off it looks totally f*ed up.

From what I've gathered, other owners have thought their throttle bodies were very dirty, when in fact they were ostkake-clean (swedish) compared to my throttle body. Also the intake manifold seems extremely dirty on my car.

A few more things I noticed was there was no rubber ring between the thingy and the intake manifold, and there is some oil-water mixture in the air-filter and hoses that go to it/through it (pictures).

What I wonder is if I should do anything more than just cleaning the throttle body? And might my engine be damaged in any way? Or is it just plain normal? :confused:
