I have quite big tyres on my fabia (sized 205/55/16) and used a tyre calculator to see how much my speedo was out by. It said if i was doing 60mph on the speedo my actual mph would be 63.7, would this mean then that my car would be displaying for example an extra 3.7 miles on the total milegage after every 60 miles?

Yes, allowing for any errors in the calculation or readings. Bear in mind as standard the speedo probably under-reads.

I'm running 215/40/17's on my VRS and it still under-reads according to the sat nav but not by much!

The speedometer and odometer do not read the same although they get their data from the same source. The speedometer has a 'correction factor' applied to make it over-read and that can be corrected with VAS or VCDS.

You can see how mych your speedometer varies from the odometer (assuming you have cruise control) by setting the cruise control to 60mph and then resetting the trip computer. Check your average speed for a true calculated value based on the odometer. It's usually 5-10% lower than your speedometer reads.
