Much appreciated

Are you buying and selling privately, or is this through a dealer? Will you have both cars at the same time.

The easiest way is to take both the V5 docs from the Fabia and Fiesta to your local DVLA office and get a direct change done. It's also the cheapest option , at £80, as it saves you putting the plate on retention first, before you then swap it onto the Fabia. That will cost another £25.

Im Part Exchanging the Fiesta for Fabia so i may have to give the company my v5 will i?

ask the dealer to do the transfer for you as part of teh deal. they will prob want the £80 but you need to pay that anyway. Then just give then the relevant docs. (v5 and insurance I think) and your new car should be plated and ready when you collect.

Also if you do it through the dealer you save 20 quid on plates, you need tax disc to transfer plates as well

Yep, as said - get the dealer to sort the transfer for you. It'll save you a trip to the local DVLA office and they can get everything done in one go.

The DVLA office will issue a certificate confirming that the private registration can then be shown on the Fabia and a new tax disc for the Fabia and Fiesta (showing its original registration). Then the current tax discs need posting back to the local DVLA office within a defined timeframe (think it's 28 days).

Paperwork will be sent from the local office to Swansea, and new V5 will be issued to reflect the various changes that have been made. They should arrive within 10 days or so.
