First, the parts you would need...

Either http://cgi.ebay.co.uk/Skoda-Fabia-1-0-1-4-Mpi-Thermostat-BRAND-NEW_W0QQitemZ390141639351QQcmdZViewItemQQptZUK_CarsParts_Vehicles_CarParts_SM?hash=item5ad640fab7 (non-genuine but an improvement on the design of the original)

or

or http://cgi.ebay.co.uk/Skoda-Fabia-1-0-1-4-Mpi-Thermostat-Complete-BRAND-NEW_W0QQitemZ390106754590QQcmdZViewItemQQptZUK_CarsParts_Vehicles_CarParts_SM?hash=item5ad42cae1e (genuine and complete)

First remove the engine cover (2 nuts under the lift off badge and cover then pull). Drain the system by removing the bottom hose at the pipe end (not the radiator). ONLY DO THIS WHEN THE COOLANT IS STONE COLD! Remove the hoses (you pinch the clips in to release them, I would advise binning the original clips and using jubilee style clips instead). If using the first part, undo the three bolts and remove, install new one with new gasket (o ring) in place. Then stick your hoses back on and fill the cooling system up with g12 or g12+ coolant and deionised water 50:50. Haynes manual says to fill with temp sender removed till the coolant emerges there and then replace the temp sender. I would advise using a new o ring on the temp sender when replacing it. However I think it's generally considered okay to fill slowly, then massage (squeeze) the hoses to try encourage any air locks out, then run the engine with the cap off till the fan cuts in then turns off - then waiting for it to cool down to top off to max mark.

If you're replacing the whole unit, I imagine you will also need a gasket for the surface that mates with the cylinder head.
