coilovers £400 ish

remap £250-300 ish

jabba rarb £200 ish

1st n 3rd + labour unless doin yourself..

In all seriousness, with spending exactly that I would say

Jabba ARB - £200

312mm brakes - £200

Suspension - £450ish variable

TT wheelarch liner mod if no FMIC - £10

PD160 intake - £60

Remap - £250 to £300 variable

Then allow the remainder for labour / own time to fit. (You're a mechanic right?)

Don't forget the suspension bushes, Cupra + Powerflex!
