I only tried a Yeti with panoramic sunroof (exact same as in superb according to dealer) and it did not seem to diminish the headroom at all, in fact it gave the impression of the opposite, more headroom, did not measure it though.

I'm 184 cm, my elder son is 180 cm.

Front or back neither of us has any problems with headroom in the Combi with panoramic roof. There's plenty of space - assuming you are of reasonably normal proportions in terms of leg and body length :-)
