I have a 04 fabia vrs , i have the 312mm brake set up .

I have slight slight brake judder , this is the second lot of pads

and discs , anyone got any ideas ?

Could it be just bad luck and there **** discs again !

or could it be something else ?

You need a dial gauge to check disc run out (should be 4 thou or less). Also check wheel bearing and suspension bushes.
