What does an EGR do, and what are the benefits of deleting it?

Sorry I've searched, but couldn't find an answer!

EGR = exhaust recirculation valve. Takes a quantity of burnt exhaust gases and sends them round for another go. This causes the EGR unit and inlet manifold to eventually clag up with soot/gunk. Deleting it resolves this issue - always get clean air then.
