Changed my front brake pads today & passenger side had an electrical lead & plug attached to it? What is the purpose of this just being on the 1 side & what actually is it?

Wear indicator. When your pads get too low it'll warn you.

They only bother to put one on one side as both sides will wear at the same rate.

Would it come up on maxidot? Reason i ask is because they had just started to grind & assumed the indicator should have shown somewhere that they had reached the limit but didn't want to risk damage to the disk so changed them anyway.

Yes, when the sensor is triggered you should get a message on Maxidot and the picture of a round circle with dotted marks around it...
