Can installing a updated intercooler on the 1.4tsi improve its economy? As surely it would lead to better cooling, better combustion etc? Anyone shed some light?

I would say no mate because cooler air means car mixes more fuel with it, going on the assumption that cold weather causes cars to loose mpg. But if a remap and intercooler done then you might find you get a slight increase aswell as a bigger smile on your face :)

Leaving the intercooler aside,I think most remaps claim to make the engine run more efficiently and so improve fuel consumption...providing you don't use the extra power available at all, which is very unlikely...

No the opposite is true , a bigger intercooler takes more air to fill with boost. On the plus side you get more air into the engine since its colder and denser so make more peak power

The car is remapped, didn't know if I could ultimately increase efficient by adding a uprated intercooler. I intend in using the map to my mpg advantage not to kill every commuter bus that comes up against the fab ;-)

Well get ya intercooler then mate guys reckon they help
