I bought a Mk1 Fabia VRS today (private sale), drove it back and after about 60 miles the coolant light came on, pulled in and checked it, the coolant seemed very low. I opened the lid and it was very heavily pressurised and as it was released the level of coolant shot right up to the min mark.

 

I have a bad feeling that its the head gasket, anyone else had a similar experience?

It is indeed the head gasket. Bad luck.

It is very likely the HG. Get a block test done to confirm.

Mine done this, I thought it was head gasket but turned out to be a cracked head, my coolant level would drop then remove expansion bottle cap and the level would fly up to the point it was over flowing
