If your gauge is working backwards, look at the sender unit and see which of these two images it looks like.

 

This one, where the connecting pads on the top and bottom right side go to the same ends of the curved contact tracks.

 

Or this one, where the two pads on the top and bottom right side go to opposite ends of the curved contact tracks.

 

Whichever one you've got, you need to find one which looks like the other one, then your gauge will go back to reading normally. I reckon.

think you're right   from memory my 03 seat is the second one-  take care they are I think glass and easily snapped

Problem is mine is now on the third sender unit, and no idea what the original one was as it was changed via previous owner.

Yes i have 2x at the minute both of which give me reverse gauge issue, one off a polo, one off a fabia 100pd. But i dont know what the original was to compare if its right or wrong.

You can work out what the original was, it'll be the opposite to what you have tried. Pop some pics up of the sender bit on the ones you can lay your hands on.

Do you mean the trail/ error between the two slider variants on the sender? Ive tried both lol same backward fuel dials
