I've not used the Scout at night yet so haven't needed to turn the headlights on but have left the switch in 'Auto' mode which seems to do the job in low light.

I thought I'd better find out how to turn the lights on manually and have worked that out but assumed that you could turn the knob anti-clockwise from the "Off" position as there are two symbols in that direction.

However my knob (no giggling please) doesn't turn anti-clockwose so what is the significance of these two symbols?

These are for when you want to pull on your knob for the front and rear fogs

Thanks for that but I don't think the knob turned anti-ckockwise even when I pulled it out!

it doesn't, the symbols are there for the pull settings

those "anti-clockwise" light symbols r for the butt-end of ur knob!! :D
to turn on the front fogs (bottom left light symbol) - the front of ur knob needs to b at minimum b positioned at parkers position.  1st click after Auto.
to turn on the rear fogs (top left light symbol) - the front of ur knob needs to b at minimum b positioned at headlight-on position.  2nd click after Auto.

u can also activate the fogs in the auto position.
