Does anyone know if the Karoq Edition comes with the double-sided boot mat as standard? (one side rubber, the other side fabric). Thanks!

No it's an optional extra

Other than a dealer has anyone found anywhere else to get the double sided boot mat from?

Does anyone know how much this costs to add as an extra? And can I request it after I pick up the car?

On the spec & pricing document that I have, it says £50. But when I just googled it & got a Skoda accessories pdf, it said £70. I'd expect that you could order one through your dealer.

The official Karoq accessories and prices list I linked above. The item varies according to whether the car has varioflex or fixed rear seats, and whether a spare tyre was specc'd.

 

I suppose the appropriate mat could be added to the order, but my guess, it'd be the UK dealer actually supplying it along with the car on handover date.

 

Best price I found was via the deal here on Briskoda, again linked above.
