Is it possible to fit power folding mirrors to replace the none folding type if so what does entail  also can i change the Bolero head unit for the amunsden unit

Depends on the car. If you have a FL Octavia 2 then yes you can but you will also need the replacement switch and you may need to change your door modules if the ones fitted to your car do not support folding mirrors, plus the car will need coding with VCDS or similar. My comments below apply if you have an Octavia 3, or any Skoda with a MIB unit:

 

Physically yes, but the Amundsen will go into Component Protection (which will either need to be cleared by a dealer, or you need a hacked unit)- plus navigation won't work as it needs a FeC (Feature Code) to enable it which a dealer can't do so for this you do need to get the unit hacked.
