my superb 02/2015 mirrors only close when i long press the remote, is there a way to fold/unfold when i lock/unlock the car?

I don't think they can be made to fold in automatically, but they will unfold automatically when the engine is started.

I presume we wouldn't want them folding back in as the doors auto lock (anti hijack locking)

No. The S2 doesn't have that feature.
