Does anyone find the brake pedal at all spongy, and noisy on release? On mine it feels like it needs quite a shove to work (the brakes themselves work fine), and the piston is really quite noisy. I asked the dealer to check it and was told it was normal, but I'm surprised it hasn't cropped up in discussion here if it was commonplace.

Also, the automatic braking pulls the pedal down very noticeably, whereas on my previous Mk3 I don't recall the pedal itself moving on either ACC braking or parking/emergency assist.

Yup, I find my brake pedal a bit spongy (and noisy on release) on my 1.5 manual but I've gotten used to it (I think). I assumed it was necessary for the ACC and auto braking as that causes the pedal to move?

Not sure about spongy when pressing it, but it definitely makes a clunk when I release it in a hurry (on a manual 2.0 TDi though).   Brake pedal moves a lot on ACC braking but I didn't have ACC on last car (Superb) so only prior experience was when the collision detection activated and braked the car, the pedal moved then!

I got similar experiences with my 1.5 tsi manual. Pedal is noisy and i need to press it quite firmly. Slows ok though.

I'm driving a Superb (2020) at the moment and I can confirm that the "automatic braking pulls the pedal down very noticeably" when I use ACC

Hmm... it's a good thing I searched the Forum, because I was starting to worry.
The noise of the brake pedal (when releasing a bit faster) is a feature also on the 2.0 TDI DSG - just as @MCG1975 was mentioning for his manual. On the other hand I have no complains about the feel of the pedal - I'm quite happy with the long travel of the pedal. The noise however, was a bit worrying the first few times I heard it.
