i have a 2023 Škoda KAMIQ 1.0 tai 95ps. Manual gearbox
 
I noticed today in the motorway it had a kickback pedal. Does anyone know why? I thought these were for automatics!

Not sure what you mean?

As you push down the the accelerator pedal down. At the the very last point just before it is completed to the floor there is a click. Almost like a button 

This is usually called a kick-down pedal. The only function I can think of is to over-ride the speed limiter.

That's for the Superb, can't find the relevant one on line but it's the same in my Kamiq printed manual

I did read the KAMIQ manual. There was only one mention of kickback there. That’s why I came here as I couldn’t find the answer in the manual 

Well detail given above so at least now you know. Enjoy your Kamiq, I love mine.
