what is the latest software for my Octavia? And where can I download them on the Internet or here in the forum?

Is there a way to delete all of the firmware on the car and then reinstall it, like on a PC? How do I uninstall?

You can't downgrade the firmware, security policies prevent it, you can usually uninstall apps like parking and petrol.
