Taken my 67 plate VRS up to 120k and I get the DPF light on regularly now. Just want to replace it- any idea how much to fully replace one is? 

 

also was taking a litre of oil every 2.5K miles like clock work till I had the DPF light come on, now it’s around 1k miles. Related?

DPF's are cleanable if not too far gone.

Work out long term? or will I get the light back on after another few K of miles? 
 

garage I go to has also suggested a delete too

No idea, I've never had it done. Mr O'Riley would be the best to ask.

Isn't this illegal?

It is. He said no one will be able to tell and it will be mapped so the light doesn’t come back on. 

You are going to have to get the head gasket replaced and/or check the piston rings if you want to stem the oil flow.  That should be the number one priority, otherwise you can clean your DPF but it will block up again really quickly with excessive oil usage.  TDI's can be oil burners....all depends IMHO on how the car was run in!
