Is it possible to code this out, I absolutely hate it, or is there an easy way to switch it off?

I did it with the 'CARISTA EVO ' on my 2020 SEL for same reason so permanently off. Not sure if this is possible with newer cars though. Good luck anyway. I presume you know it can be temporarily switched off at each start ?

I did it on my 2023 VW UP using OBDEleven.

The car has a physical lane assist button on the dash.

The car now remembers the last mode it was in.

So it is left in the off position, but I can turn it on if needed. ( for the MOT )
