New to Skoda too, just treated myself to a 1.8 vrs est, really pleased with it but already could do with picking some brains as its making a wheezing noise when i lift off the pedal (even when being driven really gently) i guess theres a technical section on this site, so off to try post more details there. If you look under "Model Specific Help" on the main Forums page, you'll see Octavia. Meanwhile, I don't know if that's a known problem (as I own a Fabia), though it might help to know if it's a new car, under warranty, and mileage etc.

Does it have an after market vent to atmosphere dump valve fitted?

Is it not just the 'psssst' of air being vented from the dump valve when you lift off?? I dont know if you have had a turbo car before or not , but they all make that noise , especially if the one you have has been modded with an aftermarket DV.
