The originals that came out never even had locking washers on them :/

The locking washer is how Skoda describe the plate with the 3 nuts spotwelded to it.

 

When I did mine last year, I fitted new plates and bolts that came with the new wishbones and balljoints

Yeh i fitted new plates and bolts.  You know the hub nut is there a way i can check it with my torque wrench now its back on the floor?  I followed all the VW procedures, 225nm, back off 1/2 turn then 90 degree angle tighten, etc etc.  But I don`t trust the angle tightening bits at all.  One side became tighter on the first 90 degree angle tighten than the other side, it all seemed a bit guess work to me.  I would have been so much happier just using torque settings rather than the angle tightening bits.  Because you can`t really be that precise with the angle tightening, I was just sort of guessing the last part, the 60 degree angle tighten. 

 

I`ve put my torque wrench on both sides and tried upto 70nm and it clicks on both sides at this setting.  Any idea what overall nm the hub nut should be to be on tight enough and safe??  It would give me peace of mind if i could just put my torque wrench on and it clicks at 100nm and that be a safe setting, for example..   

 

I`ve got visions of me driving down the motorway and one of the hub nuts working loose..call me paranoid! lol

 

I did notice when both sides had been tightened there is like a plastic or metal sleeve that comes out of the end of the big nut, but one side it came out of the nut more than the other side, is that normal for example???

What the angle tightening does is introduce pre load into the bearing, as plain torquing will just load the spacer, which is not precise enough for the job. Did you use an angle gauge or just roughly guess it?.

 

Can you try and post a picture of the plastic part you are referring to, as something doe not sound right there to be honest.

I just guessed using position of torque wrench. The nuts havent come loose so I guess thats a good sign . I jacked car up and no play in wheels either.

Being honest I tend to do this on easier angles myself, even the gauges wander a couple of degrees anyway as they are quite sloppy on the cheaper gauges.
