On long runs the average fuel consumption readout seems to freeze and does not change with driving conditions. Just returned from a trip to France and during the journey the average fuel consumption displayed 47.3 mpg for hours on end without change. After a long stop it resets and then calculates variably until it freezes again. Has anyone else had this problem?

On mine you can set this journey or all journeys by pressing the button under the wiper stalk. It indicates 1 or 2 on the screen.

Yes, I do toggle between 1 or 2. I averaged 50mpg since resetting 2 which was last summer. Setting 1 shows average mpg since the commencement of current journey.

See page 12 of your user manual. Setting 2 doesn't keep a continuous tally. It only measures your average for 20 hrs or 1999 km driving before it automatically resets. In mixed driving that means it resets every 500 or 600 miles so if you have a diesel it barely even measures a single tank full!.  If you have maxidot then the reset points are 100 hrs or 9999km.
