No-one really has ever done it DIY to be honest and I definitely would not. Its several hours work even for someone with right tools and right skills. I witnessed my last clutch change/gearbox swap and it seemed to save a lot of time just having a 2 post lift and a gearbox lift/crane.

Job went something like

1) undo all driveshaft bolts to diff

2) remove all connections like clutch pipe, reverse sensor, gearbox cables

3) take weight of box with lift

4) split box & engine

5) remove old clutch

6) remove old flywheel (6 bolts)

Reverse of the above to refit I think :D

Covered in Skoda Workshop Manual and in Haynes. You need the proper gearbox and engine support tools, and clutch alignment tool or the box wont go back in. Quite a few bolts are single use and need to be replaced as you rebuild. The box is Magnesium Alloy, and if you drop it, it will break.

How about going to somewhere like Mr Clutch who specialise in replacing clutches and are therefore probably cheaper than most other places. Saves the hassle of DIY, getting someone to help, and hiring/buying lift equipment etc.
