I've got a quick question: What is the minimum thickness for the Discs on a vRS (running the OEM 288mm vented units).

Yep. 25 mm thick when new. 22 mm minimum thickness. (I think some brake companies say 23mm min, eg. EBC does)

I don't think there is a minimum pad thickness, but as long as the backing plate is not touching the disc, them it will be fine.
