I know headlights can be adjusted but do the French Police recognise this and leave you alone? Any one had any interesting experiences?

Yes, tourist mode is perfectly legal in France and you'll be left alone.

It's the same if you don't have tourist mode on the MFD and use the tourist levers on the lights. The MkI only had these. I assume the police can see from the beam pattern that you've adjusted your lights.
