All I know is if in Eco/Norm on screen. When ever you pull back the stick an S apears on the speedo screen and the car shoots off and the speedo rises quickly when you press the throttle a bit more. That's all that matters really unless you are an F1 or rally driver and not on public roads.

No you have to press the screen

 

Interestingly, I thought that too but a few days ago I accidentally pressed the button a second time and - much to my surprise - I noticed on the screen that the VRS mode had changed.  I played with it a little more and found that you can indeed change mode just by pressing the button two or more times.  Furthermore, having changed the mode like this, after a few moments the display automatically reverts to the radio or whatever you had it on before you pressed the button.

 

My car is a 2015 model year so I wonder if this is something that changed?

Is yours MY14 or 15 Neil? I'm guessing 14 from your Fuelly.... So maybe it changed for MY15.

It's a MY14. Wonder if anything is mentioned in the MY15 owners manual....

It's in the current version of the manual (the PDF version from the Skoda site) on page 158:

 

The mode is changed by repeatedly pressing the symbol button .. or.. or in

the Infotainment display » Infotainment operating instructions, chapter Vehicle

settings.

 

In an older version I downloaded in September last year, the wording is different:

 

The selected driving mode is called by pressing the symbol button .. » Fig. 147

I can confirm my 2015 car switches modes by repeatedly pressing the button.
