Hi just noticed a couple of things with the new fun aka 'Eric'! As its been named from Banana man (old reference!)

When you are driving there is a distinct ticking noise from under the dash, which i'm guessing is maybe the speedo drive cable ?

Also, when in gear there is a slight knock as you release the clutch when changing gear sounds like its coming from below the gearstick?

check this first:

then this gearbox mounting:

for dash ticking noise, start by trying this:

if no effect, a plastic gear inside speedometer is not properly aligned.

from experience changing bowden cable has NO effect.

As above, or it could be the exhaust system knocking on the gear linkage

The first i'm assuming is the underneath of the gear stick?

Yes that top picture is the bottom of the gear lever, the bottom pic is a mirror image because that is a left hand drive model shown in that picture.
