What happenes if I unscrew the 2 serrated bolts holding the strikers for the door completely?

These things can move a bit, for easy adjustment.

 

Would the nuts behind the chassis fall down?

I would have a guess and say the Bolts will be captured or the holes where the bolts go are threaded. 

 

Don't take my word for it though...........

The striker bolts can be removed in their entirety...
