I was scrolling through the info screens (not the Maxidot) and the screen after the outside temperature shows mph in an elongated circle with dashes. Am I right to assume that after setting the speed limiter, the dashes will be replaced with my speed every time my preset speed is exceeded? Or is it used for another function?

It isn't a speed limiter it is a speed warning.  You set a max speed (default will be your current speed when you set it) and if that is exceeded you get a warning bong.  It stays sett until you cancel or change it.

& you can set a 2nd Speed Warning if you go to 'Winter Tyres' and set that.
