AEF Engine fuel problems
This usually means the engine is running rich (diesel) or very rich (petrol). I'd start by changing the air filter element, oh and not using full throttle below about 2_000 rpm.

1.9 tdi pd130 solid Amber oil light?
Dunno for sure but if the oil level is good I'd suspect a bunged up oil pickup, which is a sump off job to confirm and cure if I'm right.

Your other possibility is that the drains through the back edges of the front arches are choked.

So that's why the climate controls are so stupidly low!! @guss84 - Do you have the CD stacker? It's in the LHS of the boot near the rear light cluster.

auto gearbox issue
Well, ZF Transmissions say 100_000 miles and they've forgotten more than I know! What I do know is that used ATF stinks to high heaven and back, so it's worth getting a local garage to do this job for you!

No headlights on the way home tonight - dipped beam that is
As I think already mentioned, the issue is in the dip switch (stalk), not the headlight switch (rotary). You might be able to recover it for a while by using the flash function, but you really need a new switch I'm afraid.

Engine warning lights
Check the oil level because the oil light on this car warns of low level as well as low pressure. That might clear the oil light.

It's just a screen that flows all air that flows over the radiator fins through the fan. This web page https://wizardcooling.com/fan-shroud-selection-chart/ illustrates the sort of things we mean. (Ricardo, this is purely to explain the term, not to show a Felicia part.)

Please note that a thermostat does more that just "stop water going to the radiator when the engine is cold", it also controls the coolant flow when the engine is hot, and perverse as this sounds removing the thermostat doesn't always give you more cooling although it will probably give you a longer/slower warmup.

I got that; white smoke from a diesel usually means incomplete combustion due to a cold engine (internal temperature, not water jacket).
