There's plenty of owners who run 245/40R19 on their Superb MK3 without rubbing. 215/60R17 only adds 5.6mm to the radius of the tyre compared to 245/40R19. However, they could be wrong. 288x25mm front brakes have build code 1ZC or 1LN or 1ZD 310x25mm front brakes have build code 1ZR or 1ZP I expect the 310x25mm front brakes are reserved for the Polo MK5 with 1.8 petrol 192HP and 2.0 petrol 220HP engines.

185/65R14 would fit the 5Jx14 ET35 5/100 57.1 steel rims. 185/65R14 has almost the same outside diameter as 195/55R15. If you're lucky enough to have the small 239x18mm front brake discs, you could fit 5Jx13 ET35 5/100 57.1 steel rims, and fit 185/70R13 tyres. Steel rims can start to look rusty after a couple of winters. Tyre fitters tend to use wheel weights that scrap the paint off, leaving bare metal to rust. The Fabia MK4 uses a 5.5Jx15 ET40 5/100 57.1 rim with a 185/65R15 tyre size, but you could use this rim on the Fabia MK3 with a 185/60R15 tyre size. As you can see in the ETRTO chart below, a 5.5J rim is a normal rim width for a 185/60R15 tyre size. 185/60R15 fitted to a 6Jx15 ET38 5/100 57.1 steel rim is a standard winter tyre and rim combination on the Fabia MK3, and allows for the fitment of snow chains. As all-season tyres have the 3PMSF symbol, they are winter rated. So if you use these, you are fitting "winter tyres" in one of the approved Skoda winter tyre sizes, which is shown in the owner's manual. So no matter how cautious you are regarding insurance and modifications, this isn't a modification. If you phone your insurance company, you may speak to someone who doesn't understand tyres and rims. Therefore, you put yourself at risk of being fleeced for "modifying" your car even though you haven't modified your car. Considering that the UK courts are the ultimate judge of what is and isn't a significant modification, ie. something that affects the risk, I would rely on what it says in the owner's manual and in other technical documentation from Skoda, such as the CoC (Certificate of Conformity), rather than an office clerk at the insurance company who may not understand tyres and rims. Additionally, to be of any relevance, a modification needs to be "significant" otherwise insurance claims could be turned down for any minor reason the insurance company pulls out of the hat. Brake Disc Size
Like Pete has said, the front brake discs are either 239x18mm or 256x22mm. So with a wheel off, it shouldn't be difficult to find out. Take a rough measurement of the diameter, or measure the thickness. The minimum allowable thickness of the 256x22mm disc is 19mm, whereas the minimum allowable thickness of the 239x18mm disc is 16mm. Therefore if the thickness of the disc is more than 19mm, it will be the 256x22mm disc. You can make a rough gauge out of some cardboard, by cutting it to form two parallel lines/sides 239mm apart or 256mm apart. Some people use an old wire coat hanger to use as a gauge.

From the below chart that is in the November 2014 Yeti owner's manual: The smaller outside diameter 205/55R16 and 205/50R17 tyres are the normal sizes for the 1.6 diesel, but for the 1.6 petrol, the bigger outside diameter 215/60R16 and 225/50R17 are the normal tyre sizes. 205/55R16 and 205/50R17 are winter tyre sizes that can be used with snow chains, and all Yeti's can use those. However, on the 1.6 diesel 205/55R16 and 205/50R17 are also used on normal summer tyre sizes. What may be surprising, is that the 1.6 diesel can't use 195/65R15 and 225/45R17 tyres like the 1.2 petrol with low ground clearance (155mm). I suggest you give the seller these three OEM part numbers, as they should have all of the 205/55R16, 205/50R17, 215/60R16, and 225/50R17 tyre sizes printed on them along with their tyre pressures. I expect they cost less than 1 Euro each from Skoda parts departments, as they are only white labels that are stuck inside the fuel filler flap. Perhaps purchase a label from the Yeti 2.0TDI 81kW as that lists the tyre pressures for 205/50R17 93T, 205/55R16 91T, 215/60R16 95T, 225/50R17 94T. There were two engine versions of the Yeti 2.0TDI 81kW FWD (Front Wheel Drive), Euro 5 engine 2009-2015, and Euro 6 engine 2015 onwards. The Fabia MK2 was a dinosaur, because it was based on the Polo MK4 and wasn't replace by the Polo MK5 based Fabia MK3 until 2014, even though the Polo MK5 came out in 2009. That's why it was using the Polo MK4 sized 205/40R17 tyres, instead of the Polo MK5 215/40R17 sized tyres. The Audi A1 that came out in 2010 was based on the Polo MK5, so naturally was using the Polo MK5 sized 215/40R17 tyres, ie. cars based on the Polo MK5 got slightly bigger outside diameter tyres than cars based on the Polo MK4.

Are you using the 7Jx16 ET45 rims, or the narrower 6Jx16 ET50 rims? They should both be listed in the Certificate of Conformity. Using 6J instead of 7J rims for the 205/55R16 should give a noticeable improvement in the ride. All-season tyres with the 3PMSF symbol are winter rated, even though they can be used all year round. So I doubt you would have any legality issues in France with 205/55R16 all-season tyres (or winter tyres) fitted to these 6Jx16 ET50 winter rims on the Yeti 1.6 diesel. Maybe the Swedish winter tyres have particularly thick and inflexible sidewalls, resulting in a hard ride? It's possible the sidewalls have been reinforced on the Swedish winter tyres, because Nordic winter tyres will often be used in deep snow where you can't always see the kerb. Hence, reinforced sidewalls might be used to help stop the tyres being damaged when you accidentally hit the kerb in the deep snow. Add in the relatively wide 7J rims for the 205/55R16 tyre size, and you have a recipe for a hard ride. The Audi A1 MK1 uses 215/40R17 on it's 7.5Jx17 rims. The Kamiq uses 205/55R17 on it's 6.5Jx17 rims. Using 205/55R17 on 7.5J rims instead of much narrower rims such as 6J or 6.5J will make the ride noticeably harder. As you can see in the ETRTO chart below, the standard rim width for 205/55R17 is 6.5" (hence highlighted in bold), and the standard rim width for 215/40R17 is 7.5" (hence highlighted in bold).
